Champagne is rather a reference during the Christmas holidays usually!
Yet we wanted to talk about it in the spring introduction.
Spring makes its entrance every year with its lot of buds, tender green foliage, and explosion of flowering trees—a real delight to the eyes and, from time to time, the nose. A chorus of chirping birds flourishes in a cluster around the innocent young shoots.
Every year, at this time, our hearts rejoice at the arrival of the few rays of sunshine that dare to raise the temperature of our skies and our beautiful planet.
The start date of the work period in the vineyards still in winter, preparing to cover themselves with protective leaves for the future fruit rich in this nectar that will be named «champagne» after having shown patience, and especially at the cost of delicate and careful manipulations for months or even years, just as in fine perfumery.
Some champagnes resemble perfumes strangely, and the language associated with one or the other is often common.
A memory of a Blanc 2004 champagne I tasted not long ago. Its top notes were a refreshing and elegant burst of citrus, with notes of bergamot; followed by more rounded and pleasantly fruity touches, perhaps a slightly green pear with no acidity whatsoever, all in a subtle sweetness and fading into toasted and savory notes in the background.
